  • 0.5 cup of White self-raising flour
  • 0.5 cup of desiccated coconut
  • 1 Egg yolk
  • 2 tablespoons of Brown sugar
  • 0.25 cup of butter
  • 1 cup of dried apricots
  • 1 tin of NESTLÉ Sweetened Condensed Milk
  • 0.75 cup of unsalted cashew nuts
  • 2 Eggs
  • 1 teaspoon of Vanilla essence
  • 100 g of Dark chocolate
  • 100 g of white chocolate
  1. Combine flour, coconut, egg yolk, brown sugar and butter. Mix well.

  2. Press into base of greased 20x25cm baking tin and bake in a preheated oven at 180°C for 10 minutes and cool slightly.

  3. Place apricot cubes in pan with enough water to just cover, bring to the boil then reduce heat and simmer for 2 minutes. Remove from heat, cool and drain.

  4. Combine the prepared apricot with NESTLÉ Sweetened Condensed Milk, the extra coconut, cracked cashew nuts, eggs and vanilla; Mix well and spread over base.

  5. Bake in a preheated oven at 180°C for 20-25 minutes or until the middle is firm.

  6. Spread dark and white melted chocolate over the top and allow setting before slicing.
