Qatayef Tower with Cream

From Nestlé® you will need

Nestlé® Sweetened Condensed Milk 370g

From the kitchen you will need

  • For the Dough:
  • Flour 450 g
  • Fine Semolina 240g
  • Baking Powder 3 teaspoons
  • Instant Yeast 1 ½ teaspoon
  • Sugar 3 tablespoons
  • Salt ¼ teaspoons
  • Water 750ml and (300-375) more for thinning
  • For the Filling:
  • Cottage Cheese (Qareesh Cheese) 800g
  • Nestlé® Sweetened Condensed Milk 1 tin (370g)
  • Rose Water 2 tablespoons

  • Start by making the filling. In a large bowl, mix cottage cheese, Nestle Sweetened Condensed Milk & rose water and mix until the ingredients come together. Make sure not to have any cheese chunks come apart in the process. Set aside in the refrigerator.

  • Assemble the dough, if you don't have Qatayef on hand, whip up a fresh batch in a snap. To make the dough whisk flour, semolina, baking powder, yeast, sugar and salt. Add in the milk and water then cover and rest for 20 mins.

  • To make the dough, in a pan on medium heat, scoop out 3 tablespoons at a time. The dough should start to bubble then set. You'll know it's done when the surface is no longer glossy.

  • Place the cooked Qatayef on a clean towel and cover immediately. Let them cool 5-10 minutes.

  • Lets build the Tower, start by adding a small drop of cream filling directly on a cake stand or serving plate - this will keep the tower from sliding around. Add the first layer of Qatayef golden-side-up.
  • Next, add a small dollop of cream filling in the center of the Qatayef, spread it out into an even layer. Continue layering until you've assembled 8-10 layers. Top your tower off with 2 dollops of cream and some fresh berries.

  • Some more topping ideas, you can also garnish it with crushed pistachios or dried rose petals and if you want to make it more contemporary, add some chocolate shavings on top or crushed Lotus biscuits.
