Date Sticky Toffee Pudding

From Nestlé® you will need

Nestlé® Sweetened Condensed Milk 370g

From the kitchen you will need

  • For the Pudding:
  • (150g) pitted dates, chopped 1 cup
  • (240ml) water 1 cup
  • baking soda 1 teaspoon
  • (120g) unsalted butter, softened 1/2 cup
  • (100g) brown sugar 1/2 cup
  • (60ml) Nestlé condensed milk 1/4 cup
  • large eggs 2
  • vanilla extract 1 teaspoon
  • (130g) all-purpose flour 1 cup
  • baking powder 1 teaspoon
  • A pinch of salt
  • For the Toffee Sauce:
  • (115g) unsalted butter 1/2 cup
  • (200g) brown sugar, packed 1 cup
  • (240ml) heavy cream 1 cup
  • (60ml) Nestlé condensed milk 1/4 cup
  • vanilla extract 1 teaspoon

Step by Step

  • In a saucepan, combine the chopped dates and water. Bring to a boil, then remove from heat. Stir in the baking soda and let it sit for about 10 minutes to soften the dates.

  • Preheat your oven to (175°C). Grease a baking dish or individual ramekins.

  • In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.

  • Add the Nestlé condensed milk, eggs, and vanilla extract, and mix until well combined.

  • In another bowl, whisk together the flour, baking powder, and salt.

  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  • Fold in the date mixture (including any liquid) until evenly distributed.

  • Pour the batter into the prepared baking dish or ramekins. Bake for about 25-30 minutes, or until a toothpick inserted into the centre comes out clean.

Prepare the Toffee Sauce:
  • In a saucepan, melt the butter over medium heat. Stir in the brown sugar and cook for a few minutes until the sugar has dissolved.
  • Gradually add the heavy cream and Nestlé condensed milk, stirring continuously until the sauce is smooth and slightly thickened. Remove from heat and stir in the vanilla extract.

  • Once the pudding is done, remove it from the oven and let it cool for a few minutes.

  • Serve warm, drizzled with the toffee sauce. You can also serve it with vanilla ice cream or whipped cream for extra indulgence.
