Lemon Meringue Cookies

From Nestlé® you will need

Nestlé® Sweetened Condensed Milk 370g

From the kitchen you will need

  • (115 g) unsalted butter, softened ½ cup
  • (80 g) Nestlé Sweetened Condensed Milk ⅓ cup
  • egg yolk 1
  • (190 g) all-purpose flour 1 ½ cups
  • cornstarch 2 tbsp
  • lemon zest (freshly grated) 1 tbsp
  • lemon juice (fresh) 2 tbsp
  • baking powder ½ tsp
  • salt ¼ tsp
  • Meringue Topping:
  • egg whites 2
  • sugar ½ cup
  • vanilla extract ½ tsp

Step by Step

  • Preheat oven to 165°C Line a baking tray with parchment.

Step

  • Cream the butter and Nestlé Sweetened Condensed Milk together until smooth and pale.

Step

  • Add egg yolk, lemon zest, and lemon juice; mix well.

Step

  • In a second bowl, whisk flour, cornstarch, baking powder, and salt.

  • Add dry ingredients into the wet mixture and mix until soft dough forms.

  • Scoop 1 tbsp portions, roll into balls, and flatten gently onto the tray.

  • Beat egg whites. Gradually add sugar while whipping to stiff peaks. Add vanilla

  • Pipe the meringue onto each cookie using a star or round tip (like a little swirl).

  • Bake for 12–14 minutes, until the cookie edges are set​ and the meringue is matte and lightly golden.
