Lemon Meringue Cookies

- (115 g) unsalted butter, softened ½ cup
- (80 g) Nestlé Sweetened Condensed Milk ⅓ cup
- egg yolk 1
- (190 g) all-purpose flour 1 ½ cups
- cornstarch 2 tbsp
- lemon zest (freshly grated) 1 tbsp
- lemon juice (fresh) 2 tbsp
- baking powder ½ tsp
- salt ¼ tsp
- Meringue Topping:
- egg whites 2
- sugar ½ cup
- vanilla extract ½ tsp

Preheat oven to 165°C Line a baking tray with parchment.

Cream the butter and Nestlé Sweetened Condensed Milk together until smooth and pale.
Step

Add egg yolk, lemon zest, and lemon juice; mix well.
Step

In a second bowl, whisk flour, cornstarch, baking powder, and salt.

Add dry ingredients into the wet mixture and mix until soft dough forms.
Step

Scoop 1 tbsp portions, roll into balls, and flatten gently onto the tray.

Beat egg whites. Gradually add sugar while whipping to stiff peaks. Add vanilla

Pipe the meringue onto each cookie using a star or round tip (like a little swirl).

Bake for 12–14 minutes, until the cookie edges are set and the meringue is matte and lightly golden.
