From the kitchen you will need

  • For the dough:
  • Semolina 9 cups
  • Butter 1 ½ cups
  • Ghee 1 ½ cups
  • Sugar 1 cup
  • Nutmeg (ground) 1 teaspoon
  • Mahlab (ground) 1 teaspoon
  • Yeast 1 teaspoon
  • Rose Water ¾ cups
  • Orange Blossom Water ¼ cup
  • For the filling:
  • Nestlé® Sweetened Condensed Milk 397g 1 tin
  • Pistachio nuts (or walnuts) 3 ½ cups
  • Orange Blossom Water 1 tablespoon
  • Rose Water 2 tablespoons

  • In a bowl, combine semolina, butter, ghee, sugar, nutmeg, mahlab, rose water, orange blossom water, and yeast.
  • Mix the ingredients well, then cover and set aside for at least 4 hours.
  • Remove and knead by hands until the dough starts to hold together or forms a paste. If necessary, add a small amount of rose water while kneading.

  • In a food processor, blend the pistachios (or walnuts) until they are completely crushed. Remove and place in a bowl.
  • Mix orange blossom water, rose water and Nestlé® Sweetened Condensed Milk until all ingredients are well combined.
  • Cover and place in fridge for 1 hour.

Ma’amoul
  • Remove a small piece of dough, roll into a ball with your hands, flatten a small dent in the middle and place a teaspoon of the filling. Close carefully to form a ball again.
  • Press the stuffed dough into a ma’amoul mold to form a pattern on the upper side of the dough.
  • Tap out onto a cookie sheet that is not greased and bake at 190°C for 10-15 minutes or until lightly colored but not browned.
  • Remove and transfer onto a cooling sheet and sprinkle with icing sugar (optional).
