Rabri Recipe

From Nestlé® you will need

Nestlé® Sweetened Condensed Milk 370g

From the kitchen you will need

  • full‑fat milk 1 liter
  • (397-g) Nestle Sweetened Condensed Milk 1 tin
  • cardamom powder ¼ tsp
  • Few saffron strands
  • chopped pistachios or almonds 2 tbsp

Step by Step

  • Pour 1 Liter milk into a wide, heavy-bottom pan. Bring to a boil, then reduce to low heat.
  • Simmer 30–35 minutes, scraping the sides occasionally to collect the malai layers. Keep stirring often to avoid burning.
  • Add Nestlé Sweetened Condensed Milk. Mix gently and continue cooking for 10–12 minutes until the Rabri becomes thick and creamy.
  • Add cardamom powder. Add saffron (soaked in 1 tbsp warm milk).

Step

  • Fold in the malai layers collected on the sides.
  • Transfer to a bowl and chill for 1–2 hours for the best texture.
  • Garnish with pistachios or almonds before serving.
